Almond Flour Chocolate Chip Cookies:
1/4 Cup Unrefined Coconut Sugar
1 Large Pastured Egg at Room Temperature
2 Cups Blanched Almond Flour
1/2 Dairy Free Chocolate Chips/ Chopped Dark Chocolate Bars
2 Teaspoons Good Vanilla Extract
2 Tablespoons Dairy Free Butter Spread
Pinch of Pink Himalayan Sea Salt
1/2 Teaspoon Bicarbonate of Soda
Preheat Oven to 180C/350F
In the bowl of a stand mixer fitted with the paddle attachment, add the dairy-free spread to the coconut sugar and mix on medium high speed for one minute.
Add bicarbonate of soda, pinch of salt and vanilla extract. Mix until well incorporated.
With the mixer on low speed, add the blanched almond flour 1/2 cup at a time.
Finally, mix in dairy free chocolate.
Line a baking tray with parchment paper or a silicone mat.
Using a spoon or a small melon scoop, begin to form equal sized dough rounds on the tray.
Take a fork and gently press the centers of the dough rounds to flatten them a bit.
Place the cookies into the center of the oven.
Bake for 9-12 minutes or until the tops of the cookies are golden brown.
Yields approximately 16 cookies.
Remove from the oven and place on to a rack to cool completely. Around 30 minutes.
The cookies will be light, soft, and cake-like and can be stored for up to three days.
