1 Cup Soft Pitted Dates
(If you cannot find soft date, soak in water for 15-20 minutes)
1/4 Cup Organic Grade B Maple Syrup
1/4 Cup Organic Almond Butter or Smooth Nut Butter of Choice
1 Cup Lightly Roasted Almonds
1 1/2 Cups Gluten Free, Sprouted, Porridge Oats
Heat the oven to 180C/350F.
Arrange almonds on a sheet pan in a single layer and lightly roast the almonds for 10-15 minutes.
Add all dates into a food processor and process until smooth.
Add processed dates into the bowl of a stand mixer fitted with the paddle attachment.
Put the almond butter into the microwave until smooth, warm, and very liquid.
Add the melted almond butter to the bowl of dates and mix.
Add the maple syrup and continue to mix.
1/2 cup at a time, add the oats and mix until evenly distributed through the mix.
Finally, add the roasted almonds and continue mixing on low speed until all ingredients are evenly distributed.
Take mixture and put it into a baking tray.
Using a piece of parchment paper and the bottom of a flat jar or glass, cover and begin to flatten mix into a thin uniform height layer.
Refrigerate for 20 minutes until firm.
Slice into bars and enjoy!
*I have found that these are best stored in the refrigerator, wrapped individually for up to 5 days.
